Here’s something to be thankful for! This Thanksgiving, you can reduce your carbon footprint and enjoy a classic Thanksgiving side with this easy vegan pecan stuffing recipe.

Ingredients:

  • 8 cups of vegan pecan bread
  • 1 sweet onion
  • 3 celery stalks
  • 4 cloves of garlic
  • 1 tablespoon sage
  • 1/2 tablespoon dried thyme
  • salt and pepper to taste
  • 2-3 cups of vegetable stock

Instructions:

  • Place the cubed bread onto baking sheets and toast in a 350 degree oven for 15-20 minutes and flip halfway through
  • Sauté celery and onion until the onion is translucent. Add in the garlic, sage and thyme and sauté for another 2 minutes
  • In a separate large bowl, mix the toasted bread and the sauté mixture. Add the vegetable stock until the bread is moist but not too wet
  • Add salt and pepper to taste
  • Bake at 375 degrees for 30-40 minutes or until the top is golden and crunchy
